Shahi paneer as the name suggest is considered to be a royal recipe because of the rich ingredients involved in it. Shahi paneer is a very old, rich, authentic gravy dish and followed by generaations for any special occasions cooking.
I have used cashew nut and raisins for rich sweet texture. Cream and curd are also gives a milky soft texture.
Ingredients for making Shahi Paneer Recipe
Paneer – 200 grams
Tomato – 2 medium size
Onion – 2 medium size
Curd – ½ cup
Fresh cream – ¼ cup
Cashew Nut – 15
Raisin – 2 Table Spoons
Bay leaf -2 /3
Cinnamon stick – 1 small piece
Coriander powder – 1 tablespoon
Turmeric powder – ½ teaspoon
Red chili – 1 teaspoon
Salt – according to taste
Sugar – ½ Tea Spoon
Butter – 1 tablespoon + ¼ Table Spoon
Basic preparation of Shahi Paneer Recipe
- Soak cashew nut and raisin in fresh water for 20 minutes.
- Finely grate onion and tomato separately.
- Cut paneer in thick rectangular pieces.
- Beat curd in a bowl for 2 minutes.
Method of making Shahi Paneer Recipe
Step 1: Heat butter in a pan. Drop bay leaf, cardamom, cinnamon and clove. Sauté for ½ minute and then add grated onion.
Step 2: Saute onion for 2 minutes approx on simmer gas flame. Now add the rest of the spices and cook for ½ more minute.
Step 3: Add grated tomatoes and stir well. Just after 1 minutes, add soaked raisin and cashew nuts. Cook for next two minutes.
Step 4: Add beaten curd, stir continuously for one minute. Finely add fresh cream and stir well. Turn the gas off and let the mixture cool completely.
Step 5: Make a smooth batter of this mixture using a mixer grinder.
Step 6: Heat ¼ the tablespoon butter in the same pan and then add batter. Add ½ cup water and cook until a boil come.
Step 7: Now add sugar and sprinkle some red chili powder (optional). Stir well and finally drop paneer pieces. Mix well and cook for the next two minutes and turn the gas off.
Shahi Paneer is ready to serve. Bring it out in a serving bowl and garnish it with some fresh cream. This paneer gravy can go well with roti, naan or any Indian bread as well as rice.

- Generally raisin is not used in this cottage cheese recipe, but just to give an additional taste and richness I had added kismis. The taste was awesome.
