Bhatt Ke dubke can be prepared using different local lentils / pulses like arhar, gahat, chana and moong. The preparation of dubke is quite simple but it takes bit extra time compared to other pulses. Traditionally Dubke is cooked in an iron pot / pan and this gives the recipe a unique dark greenish black color.

Ingredients of Bhatt Ke Dubke Recipe
Bhatt Dal – 1 cup
Gandhreni (kumaon herb) – small piece of jamboo grass (optional)
Onion – 1 medium size
Ginger – a small piece
Garlic – 5 clove
Salt – according to taste
Turmeric – ¼ tea spoon
Coriander powder – 1 tea spoon
Rec chilli powder – ½ tea spoon
Cumin seed (Jeera) – ½ tea spoon
Asafoetida (Hing) – 2 pinch
Green chili – 1
Oil / ghee – 2 Table Spoon
Basic preparation of Bhatt Ke Dubke Recipe
- Wash bhatt dal and soak in fresh water for 2 hours.
- Make a coarse paste of this soaked bhatt dal using blender.
- Finely chop onion and green chilies.
- Mince garlic and grate ginger.
Method of making Bhatt Ke Dubke
Step 1: Heat oil in an iron pan / kadai. Add cumin seed and hing, jamboo grass (optional) and fry until cumin seeds turn little brown.
Step 2: Add minced garlic and fry until change color. Add finely chop onion and garlic and sauté well. Now add all the spices including salt and sauté for one more minute.
Step 3: Now add bhatt dal coarse paste and sauté well and cook for one minute. Now add 4 cups of water and green chili, stir well. Let it cook on simmer gas flame for 15 minute. You will notice a dark greenish color of the gravy. This is due to the iron pan and this is the best way to make bhatt ke dubke.
Cook until the quantity becomes half of the initial one. Turn off the gas and serve it hot with rice and fulka / roti. I love pouring a spoonful of ghee in my bowl of dubke. Enjoy the richness of Uttarakhand food.
Few useful tips for Bhatt Ke Dubke
- You can make dubke without onion too.
- Skip jumbo if it’s unavailable. This recipe can be cooked without this traditional grass too.
