Punjabi winter special dishes are perfect to beat the chill. Palak ka saag is my personal favorite and I surely cook it once in ten days. Green lefty vegetables are in demand in winters and we can do lots of mixes and match to cook them. Today I am presenting a simple and healthy version of Palak saag and I used to call it Palak butter saag or spinach butter.
Spinach is one of the healthiest vegetable. Full of minerals and vitamins, Spinach is always considered good for health and, one must add Palak or spinach in the diet. Vibrant green, healthy vegetable can be cooked in many ways. You can make palak pakora, palak paneer, palak saag and many more recipes.
This is always recommended that not to boil spinach for long to keep the nutrients alive. Today’s Palak Butter Saag recipe is a perfect example of a healthy pattern to cook green leafy vegetables. I have used salt and garam masala only in this recipe to keep the real flavor of spinach live.
Ingredients for making Palak Butter Saag
Spinach (Palak) – 250 grams
Onion – 1 medium size
Chickpea flour (Besan) – 1 Table Spoon
Cumin seed (Jeera) – 1 Tea Spoon
Asafoetida (Hing) – 2 pinch
Ginger garlic paste – 1 tea spoon
Mustard oil – 1 Tea spoon
White butter – 2 table Spoon
Salt – according to taste
Garam Masala – ½ Tea Spoon
Basic preparation of Palak Butter Saag Recipe
- Finely chop onion. Make a fine paste of ginger & garlic, if you are using it raw.
- Wash spinach properly and finely chop it. Wash one more time and strain the water.
Method of cooking Palak Butter Saag Recipe
Step 1: Heat oil in a pan / kadai, add cumin seed and asafetida. Let it fry until cumin seed sputtered. Add 1 teaspoon of ginger garlic paste and sauté for half a minute.
Step 2: Now add chopped onion and sauté until turning translucent. Add besan and sauté for ½ minute to simmer gas flame.
Step 3: Now add chopped spinach leaves and stir well. Let it, cover with a lid and cook it for 5 minutes on medium gas flame. Initially Spinach / Palak will leave the water and water will evaporate later.
Step 4: Add salt and garam masala and stir well. Cook for next 4 minute and Palak Butter Saag is ready.
Serve Palak Butter Saag hot with lots of white butter topping. Melted white butter and Palak are such a tempting combination of Punjabi food lovers.
Few useful tips for Palak Butter Saag Recipe
- Wash spinach properly with fresh water before using.
- Add chopped green chilies for a spicy flavor.
- You can cook the Palak Butter Saag in butter too. I have used mustard oil for cooing saag and used Amul white butter as a topping.
