How to make Vrat special Aloo Lauki ki Sabji?

This is Vrat special Aloo Lauki ki Sabji. I cooked this recipe without Onion and Garlic, as people don’t eat it during Navratri.
Vrat special Aloo Lauki ki Sabji Recipe
Before cooking this recipe, you will have to arrange some Potato, Bottle Gourd and Tomato. Other than this you need Ginger and Chilli according your taste. I used Quantity of ingredients for three people. If you have more people take the quantity of ingredients accordingly. This recipe will take 10 to 15 minutes of time to cook.
Ingredients for Aloo Lauki ki Sabji
Potato (Aloo) – 1
Bottle gourd (Lauki) – 1
Tomato – 2 medium sizes
Green chilli- 1
Ginger – a small piece
Cumin seed – 1/2 table spoon
Coriander Powder – 1 Table Spoon
Coriander Leaves – 1 Table Spoon chopped
Rock salt (Saidha Namak) – according to taste
Ghee – 1 table spoon
Water – 1 cup
Basic preparation of the recipe
- Wash and peel potato and bottle gourd. Cut it in medium size pieces.
- Wash tomato and finely chop it.
Method of making Vrat special Aloo Lauki ki Sabji
Step 1: Heat ghee in a pressure cooker. Add cumin seed and chopped green chillies. Let it fry for a few seconds.
Step 2: Add chopped Potato and sauté well for at least one minute. Now add Coriander powder and rock Salt (Saidha Namak). Stir well all the ingredients.
Step 3: Now add chopped Bottle gourd and mix well. Now add chopped Tomato and stir well all the ingredients. Cook it for at least two minutes.
Step 4: Now add water and close the cooker lid. Let it cook for three whistles on simmer gas flame or for 10 minutes.
Turn the gas off. When the cooker steams finished, then uncover the cooker and sprinkle some chopped fresh Coriander leaves. Mix well.
Yours vrat special Aloo Lauki ki Sabji is ready. Enjoy it with Kuttu Ki Puri or Paratha with Cucumber Raita. I love this Sabji very much. I cook this Sabji, even other normal days too, so light and yummy.
Few useful tips
1) Chop Potato and Bottle gourd in small pieces. It will save your cooking time.
2) You can add a bit of Black pepper too while adding Cumin seed. These days weather is hot, so I avoid too much use of Black pepper.
3) Add Chilli according to your taste. Try to avoid eating much spicy food during fasting. It can upset your digestive system.
4) I used Ghee for cooking this recipe, as I cooked it for fast (Vrat) Purpose. You can use oil in case cooking normally.
